Every September, the vineyard gets busy in a way it hasn’t been all year. The rows that looked quiet in July suddenly have people in them, bins moving, and a clock running. Most visitors know the general shape of it. Grapes go in one end, wine comes out the other. What happens in between is where the interesting part lives.
Here is the honest version of that journey, start to finish, without the mystique.
It starts with a decision, not a machine
Before anything gets picked, someone has to decide that the fruit is ready. This is the single most consequential call of the entire winemaking year, and it cannot be undone. Pick too early and the wine ends up thin and sharp. Pick too late and it turns flabby, high in alcohol, and short on the acidity that makes wine taste alive.
Winemakers track three things heading into harvest. The first is sugar, measured in units called Brix, which predicts how much alcohol the finished wine will have. The second is acid, which drops steadily as the fruit ripens. The third is harder to measure and matters just as much: whether the skins, seeds, and stems have ripened along with the sugar. A grape can be sweet and still taste green.
So the last few weeks before harvest involve a lot of walking the rows and eating grapes. Numbers on a refractometer are useful. Chewing on a berry and paying attention to the seeds is often more useful.
Weather forces the issue. A stretch of rain right before picking swells the fruit with water and dilutes everything. A heat spike pushes sugar up faster than the flavors can catch up. Every harvest is a negotiation between what the fruit wants and what the sky is doing.
The pick
Once the call is made, the fruit comes off fast, usually early in the morning while it is still cool. Cool fruit is calmer fruit. Warm grapes start oxidizing and fermenting on their own before anyone has decided they should.
Different varieties ripen at different times, which is why harvest is not a single day but a stretch of weeks. Whites generally come in first. Reds hang longer, waiting on those skins and seeds to catch up. On a farm growing several varieties, September and October become a rolling sequence of small harvests rather than one big event.
Crush and destem
The fruit goes into a machine that separates the berries from the stems and breaks the skins. This is the moment the word “crush” comes from, though modern equipment is far gentler than the name suggests. The goal is to open the fruit up, not to pulverize it. Seeds and stems carry bitter compounds, and grinding them releases flavors nobody wants.
What happens next is the fork in the road between white wine and red wine, and it is simpler than most people expect.
Skins are the whole story
White wine is pressed almost immediately. The juice gets separated from the skins right away, which is why white wine is pale even when it comes from grapes that look nothing like it.
Red wine ferments with the skins still in the tank. All of the color in red wine comes from skin contact, along with most of the tannin, the drying grip you feel on the sides of your tongue. Longer contact means darker color and firmer structure. This is also how rosé works. Red grapes, brief skin contact, then the juice gets pulled off before it goes deep.
It is the same fruit and the same fermentation. The difference is a matter of hours or days spent together.
Fermentation
Yeast eats sugar and produces alcohol and carbon dioxide. That is the entire chemical summary, and it undersells what is actually happening. Yeast also generates hundreds of aromatic compounds that were not present in the juice at all. The tropical notes in a Sauvignon Blanc, the banana character in a young red, the bready quality in some sparkling wines: none of that comes from the grape. It comes from fermentation.
Winemakers can inoculate with a chosen commercial yeast strain for predictability, or let the native yeasts already on the fruit and in the cellar take over. Native fermentations are slower and less predictable, and their defenders argue they produce more complexity.
Temperature is the other lever. Cool fermentations preserve delicate floral and citrus aromas, which is why whites are usually fermented cold. Reds ferment warmer, which helps pull color and tannin out of the skins.
Red fermentations also need physical attention. The skins float to the top and form a dense cap, and if nobody breaks it up, the juice underneath extracts almost nothing. So somebody punches it down or pumps juice over it, several times a day, for a week or more. This is the least glamorous and most important labor in the cellar.
Aging, blending, and the long wait
After fermentation, the wine is cloudy, harsh, and not remotely finished. Reds get pressed off their skins. Everything gets settled, racked off its sediment, and put somewhere to rest.
Many wines go through a second, non-alcoholic fermentation that converts sharp malic acid into softer lactic acid. This is the process behind the buttery, creamy texture in a lot of Chardonnay.
Then comes aging. Stainless steel keeps a wine bright, crisp, and focused on fruit. Oak barrels add vanilla, spice, and toast, and just as importantly, allow tiny amounts of oxygen to interact with the wine, which softens tannins and builds texture. Time in barrel can run a few months or a few years depending on what the wine needs.
Blending happens near the end. Different lots, varieties, and barrels get tasted and combined until the result is better than any single component. It is one of the few genuinely creative steps in a process otherwise governed by biology and weather.
Finally, the wine is clarified, sometimes filtered, and bottled. From the pick to the bottle, a white might take six months. A structured red can take two or three years.
Why no two years taste the same
This is the part worth carrying with you. Wine is an agricultural product, and every vintage is a record of one specific growing season. A cool summer, a wet September, an early frost: all of it shows up in the glass. A winemaker can guide the process, but nobody overrides the weather.
That is also why a bottle from a place you have actually visited tastes different. You know what the ground looks like. You know what the summer was like. You are drinking a particular year at a particular place, and once that vintage is gone, it does not come back.
